Veggie Pitas

I “created” these last week and husband and I liked them a lot. You can, of course, pretty much make them however you want with whatever you have around the house, but I think you should try it this way first. 🙂

Ingredients: Wheat pita pockets, veggies, guacamole, feta cheese, seasonings

First toast the pita pockets in a grill pan until they are crispy, but not too much or else they’ll break. Then shove as many veggies as you can in there (yes, these all fit!)

  • spinach
  • tomato
  • avocado
  • cucumbers
  • green peppers
  • mushrooms
  • black olives

Next spread guacamole on top and cover with feta cheese. (Yeah, I know, I used a ton and it was delicious.) Finally, sprinkle with salt, pepper, basil and greek seasoning.

I think the combo of the guacamole & feta cheese on top with the pita bread being grilled really made it. Try this out and let me know what you think!

  • Okay! I was a little confused because I always think of pitas as something you pick up to eat, kinda like a sandwich.
