red velvet cupcakes

i made cupcakes for the first time ever last night! and i cheated like the big cheater-face i am, and used boxed cake mix and icing from a container. because, well, i don’t care! hahaha! take that! err, umm, moving on..

ingredients: cheater box, cheater icing (i used whip cream icing, first time i’ve ever had it, not bad), hershey kisses, pretzels, really cute cupcake papers, 3 eggs, some amount of veggie oil that i forget but it’s on the box. it’s very important to note that my veggie oil has an expiration of may 2006. and lastly, the most important, the peanut butter chips – you eat those while you’re making everything else. 😉 [no really, i was going to do something with them but then decided not to, so i ate a bunch of them instead.]

follow the box instructions (using the oil and eggs and some amount of water, whatever, you can read).. don’t forget the lick the beaters.

fill up the cups about halfway or so. i didn’t go quite halfway and well, they kinda all fell out of the bottom, so you probably want to put them higher up.

pour the rest of the batter in. *they* say to go halfway or no more that 2/3rds of the way up, but next time i’m going higher because they’re too flat for me.

cook for the amount on the box and marvel at how pretty they look because you picked the right cupcake papers.

put icing on them (not frosting, icing) and shove pretzels in the top. the salt/sweet mix is really yum, but if you let them sit too long the pretzels go stale really fast [i think because of the icing] so really when you go to eat it, get a fresh pretzel, lol.

all done. now take pics and show off that you can cheat like a pro.

  • MM yummy! My mommy used to make these all the time when I was growing up.. and red velvet cakes. We had a red car with red velvet (fake) that we also called, “The Red Velvet Car” lol
